SPACE 3: CARBONCOOKING THE RESTAURANT
Welcome to CarbonCooking, the restaurant. This is the first restaurant that creates in the ideology of the CarbonCooking movement. Thousands of curious people have traveled across the globe to experience what our chefs make in these kitchens.
An experimental environment where the menu changes everyday, depending on what we could safe from the trash. This forces us to stay local. Most of the ingredients we cook with in this restaurant are season bonded, and that’s why they get thrown away. These ingredients are in their prime time, the juiciest and freshest version of themselves. But, they are on the border of what we see as ‘going bad’. Their shine can turn into bruises within a day, giving supermarkets less time to sell them.
We are aware that our concept stretches the rules of what our society expects from a restaurant, and our customers might be hesitant to bring a visit. But we can assure you that this technique is completely safe. It opens up new possibilities we never knew before.
